It originates in France in an area, Burgundy, which together with Alsace and Champagne, has the best geo-climatic conditions for growing these grapes.
The variety reaches excellent quality and production increases as the vines mature, then as age progresses the volumes tend to be reduced most probably due to the precociousness of the varietal and its natural tendency to bare low yields. It does not like sudden changes in temperature and prefers cold, stable climates and soils suited to its constant demands for attention, both in cultivation and in production in the cellar.
As a demanding vine, it did not make life easy for growers who welcomed it outside its native environment, with difficult and unrewarding harvests, so much so that it was only after years of research and various attempts that the first satisfactory results were achieved.

Vine of medium-low vigour with semi-erect vegetation. Adapts well to warm-temperate climates and slightly calcareous clay soils.
Prefers expanded forms of cultivation and medium-long pruning but can also be trained with spurred cordon, especially using selected clones.
Average and not always constant.
Generally not very sensitive to both disease and adversity.
Yields wines of a pale straw yellow colour, high acidity, with a fruity, fresh aroma and spicy notes.
Good structure. It can produce excellent still wines, that can age well, and also sparkling wines of undoubted quality.
