A white vinification, carried out exclusively in thermo-conditioned steel vats, and then followed by a 4-month maturation, again in steel vats, and then filling the bag in the total absence of oxygen.
A wine to be served chilled, at 6-8 degrees maximum, with aperitifs, hors d’oeuvres, seafood, vegetarian dishes, white meats, and fresh or medium-aged cheeses.
Delicate straw yellow
Acacia, jasmine, and a more pungent fruitiness of peach, apricot and citrus.
Intense and pungent on the palate, with an interesting freshness and minerality.
Harvest
A Pinot Grigio obtained from a strictly manual harvest in the third ten days of August, from certified organic agriculture, which guarantees the utmost respect for the surrounding environment.

It originates in France in an area, Burgundy, which together with Alsace and Champagne, has the best geo-climatic conditions for growing these grapes.
The variety reaches excellent quality and production increases as the vines mature, then as age progresses the volumes tend to be reduced most probably due to the precociousness of the varietal and its natural tendency to bear low yields. It does not like sudden temperature changes and prefers cold, stable climates and soils suited to its constant demands for attention, both in cultivation and in production in the cellar.
