Blackberry jam, plums, sour cherries and a nice undergrowth.
A delicate spiciness and a slightly bitter finish.
Harvest
The grapes originate from an old vineyard raised with Abruzzo pergola, coming from one of the most characteristic areas of Abruzzo at a perfect altitude to ensure a formidable temperature range and with a magnificent sun exposure.
Vinification
The wine is fermented in thermo-conditioned steel vats, malolactic fermentation follows.Maturation of 6 months in concrete tanks, then 12 months in barriques, to be bottled in the total absence of oxygen and refined for another 6 months.
It needs time to express it best characteristics, therefore it must be opened well in advance before enjoying it, at a temperature between 16 and 18 degrees, with a very large glass and with a wide rim.
It prefers well-structured and tasty foods: aperitifs, appetizers, first courses, vegetarian foods, red meats and medium and long-aged cheeses. Suits well seasoned cheese, pasta alla gricia, pesto with homemade pasta, wild boar stew with juniper seasoning or a semi-seasoned pecorino di Atri.
The vine has found wide diffusion in Abruzzo and along the Adriatic coast. The variety is fairly homogeneous, the differential characters concern the shape of the bunch, the presence of green millerandage before maturation, the ripening time, and the organoleptic characteristics of the product.
It gives an intense ruby red colored wine, with a characteristic, vinous scent, dry, fruity, tannic, not acidic, of good body structure, velvety, rightly alcoholic.
