It originates from one of the most suitable areas of Abruzzo for growing wine, from an old vineyard trained with the Tendon-system, at an ideal altitude to ensure a formidable thermal excursion and with a magnificent exposure.

The wine-making process occurs in thermo-conditioned steel vats followed by a sparkling process using the Martinotti-Charmat method for at least 3 months in autoclaves, and then isobaric bottling and corking.

A quality sparkling wine made from Passerina grapes, obtained from a strictly manual harvest in the first ten days of September, from certified organic agriculture, which guarantees the utmost respect for the surrounding environment.

A vinification performed in thermo-conditioned steel vats followed by a sparkling process using the Martinotti-Charmat method for at least 3 months in autoclaves, and then isobaric bottling and corking.

How to match
Bakán Passerina Brut Sparkling

A sparkling wine to be served cold, at 4-6 degrees maximum with aperitifs, appetizers, seafood, vegetarian dishes, meats, and cheeses.

We imagine it with a risotto allo scoglio (with seafood), a sauté of mussels, a nice courgette omelet, stuffed pork loin, or roast turkey rump.

Grape variety characteristics

Vigorous vine with semi-erect vegetation that adapts to different pedoclimatic environments.

Not very sensitive to diseases and adversities in general. Resists cold spring weather thanks to medium-late budding.

It gives wines of a deep straw yellow color, with a dry, full flavor and good acidity, to be drunk young or after short aging.
