Vinification is carried out in thermo-conditioned steel tanks, followed by 4-months refinement in cement tanks, and then bottling in the total absence of oxygen.
Fruity, fresh, and pleasantly aromatic, with a pungent note on the finish..
Straw yellow.
Sage, broom, peach and apricot.
Vigorous, in perfect harmony with the fragrances.
The Passerina DOC of the Bakán collection originates from an over thirty-year-old vine, in the Controguerra area, in the province of Teramo. The chosen training system is the Abruzzo pergola system, at an altitude of 290 meters above sea level with magnificent south-south-east exposure.
The strictly manual harvest occurs in the second ten days of September from certified organic cultivation. The vinification takes place in thermo-conditioned steel vats while the 4-months aging occurs in cement tanks before being bottled in the total absence of oxygen.
A wine to be served cold, at a maximum of 6-8 degrees, with aperitifs, hors d’oeuvres, seafood, vegetarian dishes, white meats, and fresh or medium-aged cheeses.
We imagine it with a salmon crust, sea bass carpaccio with orange, asparagus risotto, duck breast with balsamic vinegar.
Vigorous vine with semi-erect vegetation that adapts to different pedoclimatic environments.
Not very sensitive to diseases and adversities in general. Resists cold spring weather thanks to medium-late budding.
It gives wines of a deep straw yellow color, with a dry, full flavor and good acidity, to be drunk young or after short aging.
