A white wine vinification, carried out exclusively in thermo-conditioned steel vats, followed by 6 months of refinement, also in steel vats, and then bottling in the total absence of oxygen.
Elegant, pleasant, and fruity at the same time. Fine and intense, with soft tannins and an enveloping and persistent bouquet.
Coppery pink.
Fruity and floral with delicate mineral, balsamic and spicy hints.
Good structure, elegant, refined and moderately mineral.
Harvest
A magnificent Pinot Grigio, obtained from a harvest in the third ten days of August, is rigorously manual, which guarantees the maximum respect for the surrounding environment.
Vinification
A white wine vinification, carried out exclusively in thermo-conditioned steel vats, followed by 6 months of refinement, also in steel vats, and then bottling in the total absence of oxygen.
A wine to be served chilled, at a maximum of 6-8 degrees, with aperitifs, hors d’oeuvres, seafood, vegetarian dishes, white meats, and fresh or medium-aged cheeses.
We imagine it with a slice of grilled swordfish, tagliatelle with wild asparagus and cherry tomatoes, crusted lamb, but also fried eggs with asparagus.
The variety reaches excellent quality and production increases as the vines mature, then as age progresses the volumes tend to be reduced most probably due to the precociousness of the varietal and its natural tendency to bear low yields. It does not like sudden temperature changes and prefers cold, stable climates and soils suited to its constant demands for attention, both in cultivation and in production in the cellar.
As a demanding vine, it did not make life easy for growers who welcomed it outside its native environment, with difficult and unrewarding harvests, so much so that it was only after years of research and various attempts that the first satisfactory results were achieved.
