HARVEST
Manual selection of the grapes lately harvested between October, the 20th and the 30rd in a over 40 old vineyard in Colonnella and Controguerra with optimal exposure and low yeld. The terroir gives the grapes the best thermal excursions that, together with organic techniques of cultivation, enhances the sensation of balsamic scents, chocolate and coffee beans scents typical of aged Montepulciano grapes.
WINE MAKING
The wine is fermented in stainless steel tanks thermo-conditioned and after the malolactic fermentation it ages in old french barriques for 18 months and then in bottle for at least 12 months.
