HARVEST
Manual selection of the grapes lately harvested between October, the 20th and the 30rd in a over 40 old vineyard in Colonnella and Controguerra with optimal exposure and low yeld. The terroir gives the grapes the best thermal excursions that, together with organic techniques of cultivation, enhances the sensation of balsamic scents, chocolate and coffee beans scents typical of aged Montepulciano grapes.
WINE MAKING
The wine is fermented in stainless steel tanks thermo-conditioned and after the malolactic fermentation in ages in wood barrel (50 hl) and barriques for 10 months and then in bottle for at least 6 months.
TASTING NOTES
Color: Brilliant, intense ad ruby red
Nose: Flowery, fruity and spicy with notes of chocolate beans and coffee
Flavour by Mouth: It confirms the nice sensations of chocolate and coffee in addition of balsamic scents. It expresses perfectly its personality with red meat and game, blue cheese and seasoned salami.
